Our squandered bread: How close to 400.000 tons of grains are wasted in Switzerland every year

Storytelling, research and data visualization for an online and print article on food waste

In Switzerland, a lot of food ends up in the trash. Per year and per person, 330 kilograms of avoidable food losses accumulate. This includes losses across all stages of the food chain, from harvesting to processing to consumption. In terms of nutritional value, one sector has to contend with particularly high losses: bread and baked goods. Almost 55 percent of the grain grown for these products is never eaten in Switzerland.

This story traces the food looses of grain across the production chain - from the harvesting to milling, to the bakeries and detailhandel, to restaurants and hospitals, up to the private households
